Brussels sprouts with almonds

    The secret to cooking Brussels sprouts that taste good is not overcooking them, and letting them caramelise.

    Serves: 8 

    • 1kg Brussels sprouts
    • 100g butter
    • 1 small onion, minced
    • 2 tablespoons rice vinegar
    • 1 pinch sugar
    • salt and pepper
    • 100g almond flakes
    • lemon juice

    1. Steam Brussels sprouts over boiling water till just al dente, about 5 minutes. Don't cook for too long.
    2. Melt butter in a large frying pan. Fry onion till translucent. Add vinegar and cook for 1 more minute.
    3. Add Brussels sprouts and a pinch of sugar. Fry over medium heat till Brussels sprouts are lightly caramelised.
    4. In another frying pan roast almonds till browned.
    5. Add almonds to Brussels sprouts, season with salt, pepper and lemon juice to taste.
