Chocolate hazelnut cake

    This chocolate hazelnut cake is packed with chocolate nut flavours and perfect alongside a steaming mug of coffee.

    Serves: 8 

    • 140g butter
    • 220g dark chocolate with hazelnuts, chopped
    • 8 eggs, separated
    • 220g caster sugar
    • 90g plain flour

    1. Preheat the oven to 190 C / Gas 5. Grease a 20x30cm cake tin and line with baking parchment.
    2. Melt the butter and chocolate together in the microwave at 1-minute increments. Stir between each minute. When the mixture is smooth and creamy, stop cooking and allow the mixture to cool.
    3. Whisk the egg yolks, one by one, into the chocolate mixture whisking well between each addition. Stir in the caster sugar and flour.
    4. Beat the egg whites in a bowl until stiff. Fold the egg whites gently into the cake mixture. Pour the cake mixture into the prepared cake tin.
    5. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 30 minutes. Remove from the oven and allow to cool before serving.
