500g carrots, peeled and grated
2 shallots, minced
2 garlic cloves, minced
12 fresh chives, minced
4 tablespoons mayonnaise

Toss the carrots, shallots, garlic and chives in a bowl, and stir in the mayonnaise. Chill in the fridge for at least 1 hour to allow the flavours to blend.
Line a small, round bowl with cling film. Fill with the carrot salad, and press down with the back of a spoon. Cover the bowl with a serving plate and turn over to unmould the salad in a dome shape. Remove the cling film and decorate with a few whole chives.
