About this recipe: A fragrant and flavourful carrot salad thanks to the addition of fresh chives, shallots and peppery garlic.


Serves: 6 

  • 500g carrots, peeled and grated
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • 12 fresh chives, minced
  • 4 tablespoons mayonnaise
  • fresh chives, for garnish

  1. Toss the carrots, shallots, garlic and chives in a bowl, and stir in the mayonnaise. Chill in the fridge for at least 1 hour to allow the flavours to blend.
  2. Line a small, round bowl with cling film. Fill with the carrot salad, and press down with the back of a spoon. Cover the bowl with a serving plate and turn over to unmould the salad in a dome shape. Remove the cling film and decorate with a few whole chives.
