Barbecued courgette with feta and mint

    Salty feta and fresh mint combine as a refreshing spread on barbecued courgette slices. Perfect for a summer barbecue.

    Serves: 4 

    • 2 medium courgettes, cut into 1.5cm slices
    • salt and pepper to taste
    • herbes de Provence to taste
    • For the spread
    • 200g feta cheese, crumbled
    • 1 tablespoon plain yoghurt
    • chopped fresh mint leaves, to taste
    • 1 clove garlic, minced
    • pepper to taste

    1. Sprinkle courgette slices with salt, pepper and herbs. Barbecue for 5 minutes before turning.
    2. In a bowl, mix the feta cheese with the yoghurt, mint and garlic. Season with pepper.
    3. Spread the feta mixture on courgette slices and serve.


    Try substituting fresh basil for fresh mint for a different flavour sensation.
    If it is not barbecue weather, you can also cook the courgette under a hot grill or in a griddle pan.

    oh my, what a lovely recipe. The feta topping is gorgeous. I grilled the courgette  -  16 May 2013


    The feta spread is lovely. Used it on the courgettte, and as a topping for pizza - just a dab or 6 ; melted into small bites. Used a bit more yogurt than called for to make it creamy.  -  24 Aug 2014
