Courgetti with avocado pesto

    This dish fits the bill if you are on a paleo, vegan or raw food diet. It makes enough for a main course for 2, or a starter for 4 persons.

    Serves: 2 

    • 4 medium courgettes
    • 100g cherry tomatoes
    • avocado pesto (see footnote)
    • 1 lime or lemon, zested (optional)
    • salt and pepper to taste

    1. Peel the courgette and throw out the peel. Using a veg spiralizer, cut your courgette into spaghetti.
    2. Mix all the ingredients in a bowl and salt and pepper to taste.
