Bacon and prune chicken roulades

    These chicken roulades are succulent and juicy with some great flavours from the pork and prunes. Serve with vegetables or a salad.

    Serves: 2 

    • 2 chicken breasts
    • 1 teaspoon chicken seasoning
    • 1 teaspoon pepper
    • 2 rashers bacon
    • 6 dried prunes
    • 3 tablespoons plain flour
    • 1 egg, lightly beaten
    • 3 tablespoons breadcrumbs
    • oil, as needed for cooking

    1. Pat the chicken dry then sandwich between two sheets of cling film. Sprinkle with the seasoning and pepper. Pound gently using a rolling pin. Remove the cling film.
    2. On each breast, place a rasher bacon and 3 prunes in a row and roll up tightly.
    3. Coat the chicken in flour, dip into beaten egg and dredge in breadcrumbs.
    4. In a frying pan, heat the oil and fry the roulades on both sides until golden brown and chicken is no longer pink.
