Chicken breast with steamed broccoli

    A light dinner with steamed broccoli and pan fried chicken breast - and a red pepper for colour and extra taste.

    Serves: 4 

    • 1 broccoli (about 330g)
    • 4 chicken breast fillets, cubed
    • 1 tablespoon olive oil
    • 1 onion, minced
    • 1 red pepper, seeded and sliced
    • 1 teaspoon soy sauce
    • salt and pepper

    1. Break broccoli apart into florets and steam for 10 minutes
    2. Heat oil in a frying pan and fry chicken at high heat for 5 minutes. Remove from the pan and set to one side.
    3. Add onion and pepper to pan with soy sauce and 2 tablespoons water. Add salt and let simmer for 5 minutes.
    4. Add broccoli and return chicken to pan. Let simmer for a further 5 minutes and serve hot.
