About this recipe: A fresh clean tasting dish that is also very healthy. Serve with stir fry of your choice - pak choy is very good.

Serves: 2 

  • 1 stalk of lemon grass, softened in hot water for 1 hour
  • 1/2 lime, zested and juiced
  • 3 garlic cloves, chopped
  • 2 teaspoons freshly grated root ginger
  • 1 chilli, seeded and chopped
  • 1 teaspoon sugar or artificial sweetener
  • 3 tablespoons light soy sauce
  • 1/2 teaspoon fish sauce
  • 1 small bunch coriander, chopped
  • 2 chicken breast fillets, without skin

  1. Mix all ingredients except the chicken in a food processor. Pour over chicken, cover with cling film and refrigerate for 2 hours.
  2. Preheat the oven to 180 C / Gas 4. Place the chicken and sauce in an ovenproof dish.
  3. Bake until the chicken is no longer pink at the centre, about 25 minutes.
