Smoked salmon and blue cheese pizza

    This incredible smoked salmon and blue cheese pizza is a favourite in our household and is quite the delightful mix of flavours. Use less blue cheese for a more subtle flavour.

    Serves: 4 

    • 80g tomato puree
    • 1 tablespoon prepared mustard
    • 1 tablespoon olive oil
    • basil, to taste
    • oregano, to taste
    • salt and pepper, to taste
    • 1 ready made pizza dough
    • 150g smoked salmon, diced
    • 200g blue cheese, diced
    • 1 tomato, peeled and sliced
    • 150g grated cheese

    1. Preheat the oven to 220 C / Gas 7.
    2. In a small bowl, combine tomato purée, mustard, olive oil, basil and oregano, mix well. Season to taste.
    3. Roll out the dough and place on a greased baking tray. Spread the tomato mixture over.
    4. Arrange a layer of salmon, then blue cheese. Top with tomato slices and sprinkle with cheese.
    5. Bake for 12 to 15 minutes until the edges are golden brown and the cheese has melted. Remove from the oven and serve.
