Wild rice with plums

    The nutty flavour of wild rice pairs just beautifully with sweet plums for a decidedly different autumn side dish.

    Serves: 4 

    • 240g wild rice
    • 4 large plums
    • 3 tablespoons balsamic vinegar
    • 2 tablespoons butter
    • 2 tablespoons sugar
    • salt to taste

    1. Cover rice with water and bring to the boil. Reduce to a simmer and cook, covered, for about 40 minutes, or until tender with a bite.
    2. In the meantime, slice the plums. Heat butter in the pan. Add plums and sugar. Cook for 2 minutes. Add vinegar, cook for 1 minute, allowing to reduce a little. Remove from the heat.
    3. Add cooked rice to the plums and salt to taste. Mix gently, then serve.
