Thai salad with rice noodles

    A deliciously nutty Thai-inspired noodle salad with cucumber, rocket, mint and fresh coriander.

    • Noodle salad
    • 150g rice noodles
    • 1 bunch fresh coriander, finely chopped
    • 1 bunch fresh mint, finely chopped
    • 1 cucumber, sliced diagonally, seeded and cubed
    • 150g rocket leaves
    • 50g cashews
    • Dressing
    • 1 tablespoon peanut butter
    • 1 tablespoon mayonnaise
    • 2 tablespoons soy sauce
    • 2 tablespoons white wine vinegar

    1. Cook rice noodles in boiling water according to packet instructions.
    2. Combine the cooked noodles, fresh coriander, mint, cucumber and rocket in a large bowl; add cashews and toss gently to mix.
    3. Combine peanut butter, mayonnaise, soy sauce and vinegar together in a small bowl. Pour over noodle salad and toss to coat; serve..
