Tilapia in oyster mushroom cream sauce

    Tilapia is great for a quick fish dinner because it cooks very quickly, and the creamy mushroom sauce is just as fast to make.

    Serves: 4 

    • 200g oyster mushrooms
    • 2 tablespoons butter
    • 250ml double cream
    • 500g tilapia fillet, cut into small chunks
    • salt and pepper
    • 2 tablespoons plain flour
    • 2 tablespoons vegetable oil

    1. Cut mushrooms into small strips. Heat butter in a frying pan and add mushrooms. Fry till browned whilst stirring. Add cream, salt and pepper. Simmer over low heat till the mushrooms are soft.
    2. Sprinkle fish ith with salt and pepper and lightly dredge in flour.
    3. Heat oil in a second frying pan. Add fish and brown for 3 minutes on each side. Arrange the fish on a serving plate and spoon mushroom sauce over it.
