Bread machine hot cross buns

    Get some help from your bread machine and let it do most of the work for you! The hot cross bun dough is started in the bread machine, then formed into buns and baked in the oven.

    Makes: 10 hot cross buns

    • 2 eggs
    • 150g butter, cut into pieces
    • 600ml milk
    • 1 teaspoon salt
    • 3 tablespoons caster sugar
    • 360g plain flour
    • 2 teaspoons dried active yeast
    • 2 teaspoons ground cinnamon
    • 1 tablespoon raisins
    • Topping
    • 1 egg
    • 1 tablespoon milk
    • 3 tablespoons icing sugar
    • 1 tablespoon lemon juice, or as needed

    1. Place the following ingredients into your bread machine in this order: 2 eggs, butter, 600ml milk, salt, caster sugar, flour, yeast, cinnamon, raisins. Choose the program for "dough".
    2. Once the bread machine signals it is finished, line a baking tray with baking parchment. Flour your hands and place the dough on a floured work surface. Form a cylinder with the dough and cut into about 10 equal pieces. Shape each piece into a ball and place on the baking tray. Cover with a clean damp towel, and let the buns rise until doubled, about 2 hours.
    3. Preheat the oven to 180 C / Gas 4. Whisk together the 1 egg and the 1 tablespoon milk. Brush the buns with the egg wash.
    4. Bake in the preheated oven until a dark golden brown, about 25 minutes. Remove from oven and let cool.
    5. Stir together the icing sugar and just enough lemon juice to make a fairly thick icing. Pour a little icing from the tip of a spoon in the shape of a cross on each cooled bun.

    Is 600 ml of milk correct as it looks like a lot of liquid?  -  07 Oct 2017


    I wonder if there is a mistake in the amount of milk (600ml) and plain flour (360g) as the mixture came out of my bread machine like a thick batter and I had to add a lot more flour to it to try and save it. We ended up with 12 huge hot cross buns, but they were good.  -  25 Mar 2016
