Yummy lemon drizzle cookies

    These are the best lemon drizzle cookies you will ever eat and they are very easy to make! Add grated lemon zest to the mixture if you want even more lemon flavour.

    Makes: 16 cookies

    • 100g butter, softened
    • 50g brown soft sugar
    • 165g self raising flour
    • 1 pinch of salt
    • 1 tablespoon lemon juice, or as needed
    • 2 eggs
    • Lemon drizzle
    • 100g icing sugar
    • 1 tablespoon water
    • lemon juice to taste

    1. Heat oven to 160 C / Gas 3.
    2. Cream together the butter and sugar to a creamy thick mixture.
    3. Add the flour, salt and lemon juice and mix. Add the eggs and then once again mix together.
    4. Process to a dough and roll onto a floured surface. You can then cut into desired shapes. Transfer to a baking tray lined with parchment.
    5. Put in the oven for 15 to 20 minutes.
    6. While the cookies are cooking mix together icing sugar, water and lemon juice till the mixture is a drizzling consistency (you may need to add more water or lemon juice).
    7. Take the cookies out of the oven and cool for 10 minutes, then drizzle the lemon mixture over the cookies and cool for 10 minutes and then eat!


    Sieve the flour and the sugar so it's not lumpy - your cookies will turnout much better.
