Calamari with tomatoes

    When cooking calamari, it is important not to overcook it, otherwise they will be rubbery.

    Serves: 4 

    • 500g calamari
    • 3 tomatoes
    • 2 tablespoons butter
    • 1 bunch spring onions
    • salt and pepper to taste
    • 2 tablespoons plain flour
    • 2 tablespoons oil
    • 2 cloves of garlic, minced

    1. Wash squid, pat dry and slice into rings.
    2. Cut tomatoes into wedges. Saute tomatoes in butter in a large pan on medium heat for 2 to 3 minutes.
    3. Mince spring onions. Add to tomatoes and fry 1 further minute. Be careful when turning tomatoes over, so as not to break them, or you will get a mushy dish. Add salt and pepper to taste.
    4. Lightly dredge calamari rings in flour.
    5. Add 2 tablespoons oil to the pan and add calamari. Cook for 3 to 4 minutes on medium-high heat. Add minced garlic and serve.
