150g crab meat
150g cheese of your choice, grated
1 bunch parsley, minced
1 tablespoon mayonnaise

Wash the rice under the cold tap, then drain. In a lidded saucepan bring water to the boil over a high heat then add the rice and a pinch of salt. Reduce the heat to low, cover and cook until tender and fluffy, about 8 to 10 minutes. Drain.
Preheat oven to 180 C / Gas 4. Lightly grease a baking tray.
Cut the salmon into thin strips about 3 to 4cm wide. In a bowl, combine the cooked rice, crab meat and cheese. Add salt and pepper to taste, and parsley then mix in the mayonnaise.
To make roll-ups line a a small bowl or cup with a flat bottom with cling film and lightly oil. Line the bottom with salmon strips then spoon in the filling 3 to 4cm high, turn over and carefully remove from the mould and onto the prepared baking tray; discard the cling film. Wrap a salmon strip around the side and trim off any excess.
Bake for 20 minutes, until the cheese melts and the salmon is an even pink colour throughout. Remove from the oven and serve immediately.
