- 4 red peppers
- 4 tablespoons oil
- 1 onion, minced
- 3 aubergines, peeled and cut into cubes
- 50g chopped nuts
- 100g grated cheese
- 2 cloves of garlic, minced
- salt and pepper to taste

- Preheat the oven to 180 C / Gas 4.
- Cut peppers in half horizontally. Remove seeds.
- Heat oil in a frying pan. Brown onion and aubergine in oil till aubergine becomes very soft. Mash aubergine with a fork.
- Combine aubergine and onioni with the nuts, cheese and garlic. Add salt and pepper to taste.
- Spoon the aubergine filling into pepper halves. Arrange filled peppers in a baking dish and bake till bubbly, about 30 minutes.
