Peppers stuffed with aubergine

    Oven-baked peppers stuffed with aubergine, cheese and nuts.

    Serves: 4 

    • 4 red peppers
    • 4 tablespoons oil
    • 1 onion, minced
    • 3 aubergines, peeled and cut into cubes
    • 50g chopped nuts
    • 100g grated cheese
    • 2 cloves of garlic, minced
    • salt and pepper to taste

    1. Preheat the oven to 180 C / Gas 4.
    2. Cut peppers in half horizontally. Remove seeds.
    3. Heat oil in a frying pan. Brown onion and aubergine in oil till aubergine becomes very soft. Mash aubergine with a fork.
    4. Combine aubergine and onioni with the nuts, cheese and garlic. Add salt and pepper to taste.
    5. Spoon the aubergine filling into pepper halves. Arrange filled peppers in a baking dish and bake till bubbly, about 30 minutes.
