Oladyi (Russian yeasted pancakes)

    A Russian recipe for yeasted small pancakes called oladyi. Perfect for a weekend breakfast.

    Serves: 6 

    • 350ml warm milk
    • 1 (8g) sachet dried active yeast
    • 250g plain flour
    • 2 tablespoons caster sugar
    • 1 egg
    • 2 tablespoons vegetable oil
    • 1/2 teaspoon salt

    1. Dissolve the yeast in the milk, add 1/4 of the flour and 1 tablespoon sugar. Let stand for 15 minutes until the yeast starts to foam.
    2. Add the rest of the flour, sugar, eggs, salt, and oil. Whisk until smooth. Cover with cling film and let rise in a warm spot for 2 hours.
    3. Heat oil in a frying pan. Use a spoon to ladle out the batter and don’t stir. Fry oladyi from both sides till browned and set.
