Rice with green beans and mint

    Simple, fragrant and healthy side dish recipe – a mix of white and wild rice, green beans, and mint.

    Ingredients
    Serves: 4 

    • 120g long-grain rice
    • 60g wild rice
    • 200g fresh green beans
    • 1 red pepper
    • 1 onion
    • 3 tablespoons butter
    • salt and pepper to taste
    • 1 bunch mint

    Method

    1. Cook rice according to package directions in separate pans (their cooking time varies).
    2. Cut green beans across diagonally into very thin strips. Cut pepper into small cubes.
    3. Fry onion in butter on medium heat 5 minutes, add peppers and beans. Fry for a further 5 minutes.
    4. Add the cooked rice, salt and pepper. Blend and reheat for a further 2 minutes.
    5. Chop mint leaves and add to the rice. Mix well.
