Apple cake with orange zest

    An easy apple cake flavoured with vanilla, orange juice and orange zest. This tastes gorgeous served warm with a dollop of whipped cream or plain yoghurt.

    Ingredients
    Serves: 10 

    • 120g butter
    • 150g caster sugar
    • 3 eggs
    • 1 teaspoon vanilla extract
    • 2 tablespoons orange juice
    • 2 teaspoons minced orange zest
    • 125g plain flour
    • 2 teaspoons baking powder
    • a pinch salt
    • 2 apples - peeled, cored and sliced
    • icing sugar

    1. Preheat the oven to 180 C / Gas 4. Grease a 20cm cake tin.
    2. Cream butter and sugar in a bowl using an electric mixer until fluffy. Mix in the eggs, one by one. Add vanilla extract, orange zest and orange juice.
    3. Combine flour with baking powder and salt; fold into the creamed mixture with a spatula until blended.
    4. Spoon mixture into prepared cake tin; arrange the apple slices on top.
    5. Bake for 45 to 50 minutes in preheated oven, or until a skewer inserted into the middle of the cake comes out clean. Serve warm with cream or cool completely and dust with icing sugar before serving.
