Rice crab gratin

    This is a good recipe to use leftover rice, but of course you can always cook fresh rice for it, too!

    Serves: 4 

    • 100g rice
    • 250g crab sticks
    • 2 (200g) tins sweetcorn, drained
    • 150g cheese, grated
    • 1 bunch spring onions, minced
    • 1 bunch dill, minced
    • 3 tablespoons capers
    • salt and pepper to taste
    • 3 tablespoons mayonnaise

    1. Cook rice following packet instructions. Let cool.
    2. Preheat oven to 220 / Gas 7.
    3. In a bowl combine rice with corn, 2/3 of the cheese, spring onions, dill, and crab meat. Add capers and mayonnaise, and mix thoroughly.
    4. Transfer to a greased baking dish. Top with remaining cheese and bake till browned and bubbly, 20 to 25 minutes.
