Baked hake in cream sauce

    Fish fillets are first pan fried then baked in a creamy vegetable sauce. This recipe will work well with white fish such a hake or pollock.

    Ingredients
    Serves: 4 

    • 500g hake or pollok fillets, cubed
    • salt
    • 2 tablespoons plain flour
    • 2 tablespoons oil
    • 1 large onion, minced
    • 2 carrots, coarsely grated
    • 2 tablespoons ketchup
    • 2 tablespoons mayonnaise
    • 250ml water
    • 1/4 teaspoon black peppercorns
    • 1 bay leaf

    Method

    1. Preheat oven to 180 C / Gas 4.
    2. Salt fish and dredge in flour.
    3. Heat oil in a frying pan and fry fish till lightly browned. Place in a baking dish and cover with onion and carrot.
    4. In a bowl whisk mayonnaise, ketchup and water and whisk till smooth. Add bay leaf and pepper and pour over fish and veg.
    5. Bake till the sauce is bubbly, about 30 minutes.
