Spinach salad with nectarines

    Light, summery fruity spinach salad with walnuts and nectarines.

    Serves: 4 

    • 40g walnuts
    • 4 tablespoons oil
    • 1/2 teaspoon minced fresh rosemary (or 1/4 teaspoon dried)
    • 100g spinach leaves
    • 2 nectarines
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons lemon juice
    • salt and pepper to taste

    1. Heat a little of the oil in a pan. Add walnuts, sprinkle with salt and rosemary and lightly brown, about 2 to 3 minutes, stirring constantly. Let cool.
    2. Arrange spinach on a plate.
    3. Halve nectarines, remove the pit and slice into thin wedges. Arrange nectarines on top of spinach. Sprinkle with the walnuts.
    4. Combine balsamic vinegar, lemon juice and the rest of the oil. Add salt and pepper to taste. Drizzle the salad with the dressing.
