Simple soft double chocolate chip cookies
This simple double chocolate chip recipe is the same recipe that my mother taught me. It makes large chewy cookies and uses basic ingredients that everyone has at home.
Ingredients
Makes: 12 large cookies
- 225g butter
- 140g caster sugar
- 1 egg yolk
- 2 teaspoons vanilla extract
- 225g plain flour
- 55g cocoa powder
- 1/4 teaspoon salt
- 85g milk or dark chocolate chips
- 85g milk or dark chocolate, cut into large chunks

- Preheat the oven to 190 C / Gas 5.
- Beat together the butter and sugar in a large bowl with a wooden spoon. Add in the egg yolk and vanilla, and beat well.
- Sieve the flour and cocoa into the bowl, and then add the salt and the 85g of chocolate chips. Stir the dry and wet mixtures together until everything is well combined.
- Divide the mixture into 12 balls for large chewy cookies and 20 for smaller crispier cookies. Roll each portion into a ball and place onto a greased or parchment-lined baking tray, with about 2cm between each cookie. Slightly flatten each with the palm of your hand. Press the large chunks of chocolate into the tops of the cookies before putting them into the oven.
- Bake for 10 minutes and then leave to cool on the baking tray for a further 15 minutes.
Idea
If you love white chocolate, use a mixture of white and dark or white and milk chocolate in this recipe.

Great recipe, simple ingredients, easy to follow and fantastic results! Perfect for Sunday baking with the minnies. I made one batch exactly as the recipe and a second using smarties instead of choc chips. Big hit all round. - 28 Oct 2012
@JustBeingMe9 cookies aren't supposed to rise as they are not cakes. by all means add baking powder or bicarbonate of soda to this recipe if you wish, however the end product will not be a cookie. - 16 Jan 2013
