Corned beef patties

    This was my nan's recipe she used to serve us when things got tight. I make it for my grandchildren, who love it as much as we did.

    Ingredients
    Serves: 6 

    • 1.4kg (3lb) potatoes
    • 1 large onion chopped
    • 1 tin corned beef
    • 90g (3 oz) ground rice
    • oil for frying

    Method
    Prep:20min  ›  Cook:15min  ›  Ready in:35min 

    1. Peel and boil potatoes till soft. When soft, drain and leave to cool.
    2. While potatoes are cooling, chop the onion finely and also chop tin of corned beef into chunks.
    3. When potatoes are cool, mash them and combine with the corned beef and onion. Shape into patties and dredge with ground rice. Heat oil in a shallow frying pan and fry until golden brown and crispy. . . enjoy!
