Sausage and leek bake

    A comforting dish, great for cold days! Cheap to make too! Carrots, onions and leeks bake with sausage under potato slices and Cheddar cheese.

    Serves: 3 

    • 8 pork sausages
    • 1 onion, finely chopped
    • 2 garlic cloves, finely chopped
    • salt to taste
    • 1 large leek, washed and finely sliced
    • 4 carrots, sliced
    • 60g Cheddar cheese,grated
    • 1 pork stock cube
    • 125ml boiling water
    • 3 to 4 potatoes, peeled and sliced

    1. Preheat the oven to 200 C / Gas 6. Cut the sausages into quarters, then place into an ovenproof dish along with the onion and garlic. Season with a little salt.
    2. Bake them in the preheated oven until no longer pink at the centre, about 20 minutes.
    3. Meanwhile put the sliced potato into a large pan, cover with water, add a little salt and boil until softened, about 10 minutes.
    4. Also put the carrots and leek into a saucepan, fill with water and boil for 10 minutes. Drain and place on top of the sausages.
    5. Crumble the stock cube over the veg, then pour the boiling water over.
    6. Drain the potato slices and place on top of the veg. Sprinkle the grated cheese over the potatoes.
    7. Bake in the oven for 30 minutes. Leave to stand for 5 minutes then serve.
