Buckwheat with salmon

    A simple but hearty dish of cooked buckwheat, pan-fried in butter with finely chopped onion and salmon.

    • 200g buckwheat
    • 300g boneless salmon fillet, cubed
    • 1 onion, finely minced
    • 2 tablespoons butter
    • salt and pepper to taste

    1. Cook buckwheat in boiling water, according to packet instructions; drain if needed.
    2. Melt butter in a pan over medium heat; add onion and cook until onions are caramelised, about 10 to 15 minutes. Stir in salmon cubes and cook for a few minutes or until pink.
    3. Stir in cooked buckwheat; season to taste with salt and pepper.
