Rustic potato and goat cheese tart

    This is a simple open top rustic tart with an olive oil pastry, topped with potatoes, onion, parsley and goats cheese.

    Serves: 8 

    • 200g plain flour
    • a pinch salt
    • 100ml olive oil
    • 4 or 5 tablespoons milk
    • 4 new potatoes, peeled and cubed
    • 2 onions, finely chopped
    • 1 bunch parsley, finely chopped
    • 200g goats cheese, sliced
    • salt and pepper to taste

    1. Preheat oven to 160 C / Gas 3. Lightly grease a baking tray or pie dish.
    2. Place flour and a pinch of salt in the bowl of a food processor; add olive oil and blend until the mixture resembles fine crumbs. Add 4 or 5 tablespoons of milk; pulse until a soft dough forms.
    3. Roll the pastry out on a lightly floured surface; place on prepared baking tray or line the base of a pie dish with the pastry.
    4. Combine potatoes and onions in a bowl; season with salt.
    5. Arrange potato and onion mixture on top of the pastry, folding up the edge of the pastry to form a rustic tart. Bake in the preheated oven for 20 minutes.
    6. Scatter freshly chopped parsley on top of potatoes and top with slices of goats cheese; continue to bake until potatoes are tender. Serve warm.
