Microwave chocolate marble cake

    A quick chocolate and vanilla marble cake that's cooked in the microwave in less than 10 minutes! I like to add a chocolate glaze when the cake has cooled.

    Serves: 8 

    • Cake
    • 2 eggs, beaten
    • 200g caster sugar
    • 250g soured cream
    • 200g plain flour
    • 1 teaspoon baking powder
    • 2 tablespoons cocoa powder
    • 1/2 teaspoon vanilla extract
    • Glaze
    • 2 tablespoons cocoa powder
    • 2 tablespoons soured cream
    • 2 tablespoons icing sugar

    1. Grease and flour a microwave-safe silicone cake mould.
    2. Blend eggs with sugar in a large bowl. Add soured cream, plain flour and baking powder; mix well. Divide cake mixture between two separate bowls.
    3. Add cocoa powder to one bowl; mix well. Add vanilla to the other bowl; mix well.
    4. Transfer vanilla cake mixture into prepared silicone mould; spoon chocolate cake mixture on top. Create a marbled effect by swirling a skewer down the centre.
    5. Cook in the microwave for 6 minutes, or until cake is cooked through. Remove cake from mould and allow to cool on a wire rack.
    6. Combine 2 tablespoons of cocoa, 2 tablespoons of soured cream and 2 tablespoons of icing sugar together until smooth; spread on top of cooled cake.
