Strawberry parfait

    This easy frozen dessert can be made with different types of berries but fully ripe strawberries are still the best.

    Serves: 4 

    • 500g strawberries
    • 4 egg yolks
    • 100g caster sugar
    • 250ml double cream
    • 2 teaspoons vanilla sugar
    • 150g natural yoghurt

    1. Clean and hull strawberries. Puree till smooth and refrigerate.
    2. In a hot waterbath or a double boiler, beat egg yolks with sugar till thick and foamy. Remove from the heat and let cool.
    3. Beat double cream with vanilla sugar till stiff. Fold in egg yolk mixture and yoghurt. Tip in a freezing container and level the top with a spatula.
    4. Freeze for a day or overnight. Remove from the freezer a few minutes before serving.
