Butter bean and feta cheese salad

    Butter beans are mainly used from the tin but if you can find fresh butter beans, or if you grow them in your garden, try this quick and easy salad.

    Serves: 4 

    • 500g fresh butter beans
    • 150g feta or crumbly goat cheese
    • 1 onion
    • 2 tablespoons dill
    • 4 tablespoons olive oil
    • 1 tablespoon lemon juice
    • salt and ground pepper to taste

    1. Place unpeeled beans in boiling water and cook till tender, about 3 minutes.
    2. Drain the water, let cool a little and remove pods. Place in a large mixing bowl (you can place them in the fridge to let them cool completely).
    3. Cut the feta cheese into cubes. Mince dill and chop onion.
    4. Whisk oil with lemon juice, add salt and pepper.
    5. Combine the beans with dill and onions. Drizzle with dressing and mix well. Add feta cheese and mix again. Add more salt to taste.
