500g boneless salmon fillet, skin on
150g goat's cheese
1 small bunch fresh basil, chopped
ground pepper, to taste
2 tablespoons olive oil
4 tablespoons lemon juice

Cut the fillet into 4 sections. Place skin side down on a chopping board and make a 1 inch deep slit through the centre of each fillet, trying not to damage the skin.
Mash cheese with a fork, add chopped basil leaves and ground pepper and mix well. Fill the incisions with this cheese mixture.
Warm the oil in a frying pan over a medium heat and add the salmon, skin side down. Cook covered on low heat for 7 to 10 minutes until the fish is an even pink colour throughout and flakes easily with a fork. Just prior to serving, drizzle with lemon juice. Serve immediately.
