Red cabbage with walnuts

    Instead of boiling red cabbage, try this easy pan fried red cabbage recipe for a Christmas side dish. Finely sliced red cabbage and onion are fried in butter, then jazzed up with walnuts and lots of spring onions.

    Serves: 4 

    • 4 tablespoons butter, divided
    • 500g red cabbage, finely sliced
    • 1 onion, minced
    • 120g chopped walnuts
    • 1 tablespoon sugar
    • 1 bunch spring onions, sliced
    • salt and freshly ground black pepper

    1. Melt 2 tablespoons of butter over medium heat in a large pan. Add finely sliced cabbage and onion; cook and stir for 10 minutes.
    2. Add remaining 2 tablespoons of butter, walnuts and sugar. Season to taste with salt and pepper. Stir in spring onions; cook and stir for another minute before serving.
