Instead of boiling red cabbage, try this easy pan fried red cabbage recipe for a Christmas side dish. Finely sliced red cabbage and onion are fried in butter, then jazzed up with walnuts and lots of spring onions.

4 tablespoons butter, divided
500g red cabbage, finely sliced
1 onion, minced
120g chopped walnuts
1 tablespoon sugar
1 bunch spring onions, sliced
salt and freshly ground black pepper

Melt 2 tablespoons of butter over medium heat in a large pan. Add finely sliced cabbage and onion; cook and stir for 10 minutes.
Add remaining 2 tablespoons of butter, walnuts and sugar. Season to taste with salt and pepper. Stir in spring onions; cook and stir for another minute before serving.
