Halloumi mushroom burger

    Halloumi is an excellent choice for a burger topping because it holds its shape well when cooked.

    Serves: 4 

    • 250g shiitake or button mushrooms
    • 1 onion
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • 1/2 teaspoon dried thyme
    • 150g halloumi cheese, sliced
    • 4 burger buns, preferably whole wheat
    • salt and pepper

    1. Thinly slice mushrooms. Slice onion thinly into half-rings.
    2. Saute onion in butter until soft. Add sliced mushrooms and cook on high heat until they start to soften, stirring often.
    3. Add garlic and thyme. Mix thoroughly. Cook for 1 more minute. Remove from the pan.
    4. Place the halloumi slices in the pan and cook till browned on both sides.
    5. Top the lower part of bunss with mushroom mixture and top with halloumi slices. Place the upper half of the bun on top and serve.


    Instead of cooking the halloumi in a frying pan, you can also cook it on a griddle.
