Pasta with scallops and rocket

    In this quick and simple seafood dish rocket is tossed with the pasta after cooking, so it's practically a pasta and salad all in one.

    Ingredients
    Serves: 4 

    • 250g linguine or any other long pasta)
    • 2 cloves garlic, minced
    • 2 tablespoons butter
    • 500g scallops
    • 120ml dry white wine
    • 1 lemon, zested and juiced
    • salt and pepper to taste
    • 120g rocket
    • 1 (185g) jar black olives

    Method

    1. Cook pasta al dente following packet instructions.
    2. Fry minced garlic in butter till translucent. Add scallops and cook for 1 minutes. Turn over.
    3. Add white wine, lemon zest and lemon juice. Cook on high heat till the liquid is reduced.
    4. Add drained pasta, salt, and freshly ground pepper. Toss with arugula and black olives and serve.
