Pan fried salmon sandwich

    Not only smoked salmon is good on bread - try pan fried salmon fillets on your sandwich for a change.

    Ingredients
    Serves: 4 

    • 4 slices wheat bread
    • 150g salmon fillet
    • 1 tablespoon oil for cooking
    • salt and ground pepper to taste
    • 2 tablespoons mayonnaise
    • 4 lettuce leaves
    • 1 tomato, sliced

    Method
    Prep:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Lightly toast bread.
    2. Cut fillet into thin slices. Fry in oil for 2 minutes on each side. Sprinkle with salt and pepper.
    3. Spread mayonnaise on toasted bread, top with lettuce leaves, followed by tomatoes and fried fish.
