Green salad with salmon, easy peelers and avocado

    A fresh mixed leaf salad that can double as a light main course, combining spinach, arugula, salmon, avocado and easy peelers such as clementine mandarins.

    Serves: 4 

    • 200g salmon fillets
    • oil for cooking
    • 2 easy peelers
    • 1/2 onion
    • 1 avocado
    • 200g mixed leaf salad
    • 2 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • salt and pepper to taste

    1. Sprinkle the fish with salt and pepper. Heat oil in a frying pan and fry fish until it can be flaked with a fork. Remove from the pan and cut into chunks.
    2. Peel mandarins and remove the pith. Cut the segments into small pieces. Cut the onion into thin half-rings.
    3. Cut avocado in half lengthwise and remove the pit. Cut into cubes. Combine leaf salad, avocado and oranges in a serving bowl. Add the onion and top with the fish.
    4. In a bowl whisk olive oil, balsamic vinegar, and salt and pepper. Drizzle over the salad and serve.
