Scallop and cucumber salad

    A light seafood salad of very fresh raw scallops with cucumber and radishes served on a bed of lettuce with a tangy dressing.

    Serves: 4 

    • 1 bunch mixed lettuce leaves
    • 1 cucumber, sliced into half moons
    • 1 bunch radishes, thinly sliced
    • 2 tablespoons freshly chopped dill
    • 400g very fresh scallops
    • 4 tablespoons creme fraiche
    • 4 tablespoons buttermilk
    • salt and pepper to taste

    1. Arrange lettuce leaves, cucumbers, radishes and fresh dill on a large salad platter. Set scallops on top.
    2. Mix creme fraiche and buttermilk together in a small bowl; season to taste with salt and pepper.
    3. Drizzle dressing on top of scallops; serve.
