Salmon fillet with creamy dill sauce

    A simple recipe for pan fried salmon fillets with a thick creamy lemon sauce made with creme fraiche, dill and capers.

    • oil for cooking
    • 4 salmon fillets
    • salt and pepper to taste
    • 100g creme fraiche
    • 2 tablespoons capers
    • 2 tablespoons finely chopped fresh dill
    • 2 tablespoons lemon juice

    1. Heat oil in large non-stick pan over medium heat. Season salmon fillets with salt and pepper; fry in hot oil for 4 minutes on each side or until cooked through.
    2. In a small bowl, combine creme fraiche with capers and freshly chopped dill; stir in lemon juice and season to taste with salt and a little pepper.
    3. Serve salmon fillets with a dollop of creamy dill sauce.
