A tasty and wholesome recipe for quinoa with curry, peaches and paneer cheese. Delicious served warm or cold depending on your mood.

170g quinoa, rinsed well under cold water
oil, for cooking
200g paneer cheese, cubed
1 teaspoon curry powder
salt and pepper, to taste
2 peaches, cut into wedges

Place the quinoa in a saucepan and rinse under cold tap for a few minutes. Pour in 475ml water and bring to the boil over a high heat. Reduce the heat then cover and cook until the quinoa is fluffy and tender, about 15 minutes.
Warm a little oil in a pan over a medium heat and add the paneer cheese; cook and stir for a few minutes to brown. Sprinkle in the curry powder and add the peaches. Cook for 1 minute.
Add in the cooked quinoa and mix thoroughly. Cook for another 1 to 2 minutes then serve either warm or allow to chill in the fridge before serving.
You can substitute tofu for paneer cheese and bulgur wheat for the quinoa.
