    Ingredients
    Serves: 4 

    • 170g quinoa, rinsed well under cold water
    • 475ml water
    • oil, for cooking
    • 200g paneer cheese, cubed
    • 1 teaspoon curry powder
    • salt and pepper, to taste
    • 2 peaches, cut into wedges

    Method

    1. Place the quinoa in a saucepan and rinse under cold tap for a few minutes. Pour in 475ml water and bring to the boil over a high heat. Reduce the heat then cover and cook until the quinoa is fluffy and tender, about 15 minutes.
    2. Warm a little oil in a pan over a medium heat and add the paneer cheese; cook and stir for a few minutes to brown. Sprinkle in the curry powder and add the peaches. Cook for 1 minute.
    3. Add in the cooked quinoa and mix thoroughly. Cook for another 1 to 2 minutes then serve either warm or allow to chill in the fridge before serving.

    Substitutions

    You can substitute tofu for paneer cheese and bulgur wheat for the quinoa.
