Potato and green bean salad

    A very simple and yet delicious potato salad with green beans, spring onions and parsley. The horseradish and creme fraiche dressing gives it a bit of a kick!

    Ingredients
    Serves: 4 

    • 4 potatoes
    • 300g green beans
    • 4 spring onions, sliced
    • handful fresh parsley, finely chopped
    • salt and pepper, to taste
    • Dressing
    • 100ml creme fraiche or soured cream
    • 1 tablespoon horseradish

    Method

    1. Peel potatoes and boil for 20 min, until tender. Cool slightly and slice into bite-size pieces.
    2. Blanch the green beans for 2-3 minutes in boiling water. Slice in half or into thirds.
    3. To make the dressing, combine creme fraiche with horseradish in a small bowl; whisk with a fork until well mixed.
    4. Combine potatoes, green beans and herbs in a salad bowl; season to taste with salt and pepper. Pour on dressing and toss before serving.
