Ingredients
Serves: 4
250g rice noodles
50ml soy sauce
50g brown sugar
2 tablespoons lemon juice
300g firm tofu, sliced into cubes
2 tablespoons sesame oil
2 carrots, peeled and thinly sliced
1 red pepper, thinly sliced
2 spring onions, finely sliced
50g chopped roasted peanuts

Cook the noodles according to the directions on the package; drain and set noodles aside.
Combine soy sauce, brown sugar and lemon juice in a bowl; add tofu cubes and set aside to marinate.
Heat sesame oil in a frying pan over medium heat. Add carrots and red peppers; cook and stir for about 2 to 3 minutes. Add tofu (reserving the marinade) and chopped spring onions. Cook, stirring continuously, for about 5 minutes.
Stir in chopped peanuts and reserved marinade; stir well. Add noodles and toss to heat through; serve.
