    A delicious recipe for sesame and soy noodles, stir-fried with vegetables, firm tofu and roasted peanuts.

    Ingredients
    Serves: 4 

    • 250g rice noodles
    • 50ml soy sauce
    • 50g brown sugar
    • 2 tablespoons lemon juice
    • 300g firm tofu, sliced into cubes
    • 2 tablespoons sesame oil
    • 2 carrots, peeled and thinly sliced
    • 1 red pepper, thinly sliced
    • 2 spring onions, finely sliced
    • 50g chopped roasted peanuts

    Method

    1. Cook the noodles according to the directions on the package; drain and set noodles aside.
    2. Combine soy sauce, brown sugar and lemon juice in a bowl; add tofu cubes and set aside to marinate.
    3. Heat sesame oil in a frying pan over medium heat. Add carrots and red peppers; cook and stir for about 2 to 3 minutes. Add tofu (reserving the marinade) and chopped spring onions. Cook, stirring continuously, for about 5 minutes.
    4. Stir in chopped peanuts and reserved marinade; stir well. Add noodles and toss to heat through; serve.
