This is a Russian-inspired cabbage and apple side dish with a slight bite to it thanks to the vinegar. Ideal served alongside fish, meat or vegetarian main dishes.

2 tablespoons olive oil
1 onion, minced
1 teaspoon caraway seeds
500g red cabbage, grated
1 green apple, cored and cubed
salt and pepper, to taste
4 tablespoons wine or apple vinegar
chopped fresh herbs of your choice, to taste

Warm the oil in a frying pan over a medium-high heat. Add the onion and cook and stir for 5 minutes. Add the caraway seeds, cabbage and apples and stir. Season with salt and pepper and drizzle over the vinegar. Add any herbs you would like at this point. Cook for about 5 minutes on med-high heat, so the cabbage is browned, but still crunchy. Serve hot.
