Rice with green beans, chicken, and mushrooms

    Serves: 4 

    • 500g boneless chicken, skin on
    • 250g green beans, sliced
    • 200g button mushrooms, sliced
    • 2 cloves of garlic, minced
    • 1 tablespoon olive oil
    • salt and ground pepper to taste
    • 300g cooked rice

    1. Cut chicken with skin on into small chunks. Chicken with skin on could be cooked without oil. Place chicken pieces in a hot frying pan with the skin side down. Fry on high heat until golden and crispy, about 5 minutes.
    2. Add oil, green beans and mushrooms.
    3. Cook for 5 minutes, then add garlic. Combine with cooked rice. Add salt and pepper and fry for 5 more minutes.
