200g puff pastry
4 tablespoons runny honey
4 tablespoons ground almonds
300g fresh figs, thinly sliced
1 tablespoon chopped fresh thyme
50g sliced almonds
1 egg white

Preheat the oven to 200 C / Gas 6. Grease a tart tin and trim the edges.
Brush this base of the tart with honey (if desired, melt it in a microwave for a few seconds making it easier to spread). Sprinkle the base with ground almonds then top with sliced figs and sprinkle with chopped thyme. Arrange the sliced almonds on top. Lightly beat egg white with a little water and brush figs and nuts with this mixture.
Bake for 30 minutes, or until the puff pastry is risen and golden. Remove from the oven and serve warm, or allow to cool before slicing and enjoying.
Instead of 200g puff pastry you can also use a ready-rolled sheet of pastry of the same weight.
