About this recipe:Creamy mascarpone cheese and plump fresh figs combine for this delicious sweet bite. Ideal as a canapé for a special party during fig season which for main crop runs late summer to autumn.
250g puff pastry
250g mascarpone cheese
2 tablespoons lemon juice
65g caster sugar
1 teaspoon vanilla extract
3 to 4 fresh figs, sliced thinly lengthways

Preheat the oven to 200 C / Gas 6.
On a lightly floured work surface, roll out the pastry to about a 5mm thickness (alternatively you can purchase a ready-rolled sheet). Cut into small even rectangles and arrange on a baking tray.
Bake in the preheated oven for 15 to 20 minutes or until risen and blushed golden brown. Remove from the oven and allow to cool thoroughly.
In the meantime, combine the mascarpone cheese with lemon juice, sugar and vanilla and beat until creamy.
Once cooled, cut the pastry rectangle in half horizontally. Top each half with a dollop of cheese, and a couple fig slices. Serve.
