Pan fried oysters

    If you think of oysters only as being eaten raw, try this recipe for battered pan fried oysters. Serve them with a spicy tomato sauce and fresh baguette.

    Serves: 4 

    • 12 oysters
    • 1 egg
    • 4 tablespoons milk
    • 2 tablespoons plain flour
    • 2 tablespoons butter
    • salt and pepper

    1. Clean oysters and open with an oyster knife.
    2. Drain oyster juice into a cup and discard or use in another recipe.
    3. In a bowl beat egg with milk. Dip oysters into the egg mixture, then dredge in flour.
    4. Heat butter in a frying pan and fry oysters till evenly browned, turning frequently. Season with salt and pepper and serve at once.
