About this recipe: Lemon and chicken has always been a match made in heaven. Enjoy this great combination with green olives, adding a boost to the flavours and giving the dish a Mediterranean twist.


Serves: 4 

  • 600g boneless chicken breast fillets
  • 4 tablespoons olive oil
  • 1 lemon, halved
  • salt and ground pepper, to taste
  • 2 tablespoons thyme
  • 140g pitted green olives, sliced

  1. Preheat the oven to 200 C / Gas 6.
  2. Beat the chicken fillets lightly with a meat mallet and place on a baking tray. Drizzle with olive oil and the juice of 1/2 lemon. Slice the other lemon half and arrange the slices around the chicken. Sprinkle with salt, pepper, and thyme.
  3. Bake in the preheated oven for about 30 minutes, until the chicken is no longer pink in the centre. In the last 5 minutes add sliced olives. Remove from the oven and serve.
