Mushroom salad with blue cheese dressing

    A great green salad with mushrooms and creamy blue cheese dressing. Makes a great side dish to any meal.

    Serves: 4 

    • 250g button mushrooms
    • 1 lettuce (romaine or gem)
    • 1 bunch spring onions
    • 100g gorgonzola or another blue cheese)
    • 100g single cream
    • 2 tablespoons lemon juice
    • salt and pepper to taste

    1. Wash mushrooms. Boil in lightly salted water for about 10 minutes. Slice them thinly.
    2. Tear the lettuce into pieces. Mince spring onions.
    3. Mash cheese with a fork. Add cream and lemon juice and mix thoroughly. Add salt and pepper.
    4. In a salad bowl combine mushrooms, lettuce and onion and toss with the cheese mixture. Serve at once.
