2 tablespoons butter
1 pinch saffron
salt and ground pepper to taste
2 tablespoons lemon juice

Mince onion. Gently fry in butter. Add rice and raisins, and cook until rice is glassy whilst stirring. Add saffron, salt, and 150ml water. Cover and cook for about 15 minutes. Gradually add about 100 more water, do not stir.
In the meantime, cut the tops off the tomatoes. Scoop out centre along with the seeds.
Once the rice is cooked, let cool. Mix in lemon juice. Fill the tomatoes with rice and serve.
